Dandelion leaves are a nutritious free food.
Dandelion leaves have very high amounts of carotenes expressed as vitamin A, vitamin C complex expressed as ascorbic acid, potassium and calcium. The fresh or cooked leaves have high amounts of iron, phosphorus, and B vitamin complex including riboflavin, thiamine, niacin and choline. Also manganese, sulpher, magnesium, silica, low sodium, potash and vitamin D.

Dandelion Greens
per person:
1 C dandelion greens
1/4 C water in pot
Wash greens well.
Chop coarsely without drying. Add to pot with water.
Bring to boil. Reduse heat and cook to taste.
Firm or mushy.
Variations;
add raw garlic, olive oil, salt and pepper.
add vinegar and salt.
add sour cream and onion.
add bacon.

Hello, I love your photo. And thank you for the great information! I, too, am a dandelion connoisseur! I have so many dandelions. They are so delicious! I love them very much! Fortunately, I just picked some for my lunch this morning. Rain, or not, they’re such a great pick-me-up. I loved the You Tube video you posted about them some time back. Got dandelions?

I love Dandelion Greens (and Dandelion tea)! I never could figure out why people wanted to spray them with nasties!
I've heard so much about the benefits of dandelions, I'm not sure why I haven't tried them yet.
